Milagu samba is a traditional white rice. The rice got its name from its resemblance to peppers, which are small and round in shape. This parboiled semi-polished rice has 20–25% bran. The rice contains whole-packed nutrients, making it perfect for a tasty and healthy breakfast. The rice goes well with all south Indian curries, be it veg or non-veg. The best rice to consume for athletes to stay energised.

Milagu samba is well-known for its medicinal properties that help to detoxify our bodies.It was extensively used by the worriers during ancient times.

We get our hands on Milagu samba rice through an organically certified farmer from Puthukotai. Milagu samba is an occasional rice variety that is grown during the samba season in Tamil Nadu, which is from September to January.

Storage

• After opening the package, store the rice in an airtight container in a cool, dry place.
• Don't be worried if you find bugs in your long-stored rice. This is normal when grain is grown organically and naturally processed and stored.
• After an hour of sun drying and two hours of shade drying, clean the rice and replace it in the container with some cloves, bay leaves, or chilies.

Cook

• Pressure cooker: Soak 1 cup rice : 3 cups water. Cook on high flame for up to three whistles.
• Open vessel: 1 cup rice : 3 cups water. Boil water before adding rice and cook on low flame for 20 minutes. Drain excess water once rice is cooked.
Note: Before cooking, soak the rice for 1 hour. This softens the rice and reduces the cooking time.
