Mustard is one of the ubiquitous seed spices used in Indian cuisine, so small and used so much that nobody actively thinks of its role in the cuisine. So, in most places, mustard is used for tadka and otherwise relegated to being a non-glamorous spice except in certain regions where the mustard flavour is an integral part of the cuisine.
Mustard is an important oilseed, and mustard oil is one of the major oils used in many parts of the country. Mustard greens are a seasonal favourite in all mustard-growing regions.
Mustard sarson/kaduku/ rai/ sasive in various languages is used in almost all Indian regional cuisines.
Like other spices, mustard is grown during the Rabi season and harvested in February/March.
This seed spice is grown mainly in Madhya Pradesh, Rajasthan, Uttar Pradesh, madhya pradesh & Haryana are the top mustard-growing states.
Mustard is a hardy spice that usually resists infestation and is easy to store and maintain.

It comes from two sources: a certified organic farmer producer group in Karnataka, which sources its spices from certified organic farmers in Gujarat & Rajasthan.
The second source of fenugreek is a PGS-certified organic farming collective based in Rajasthan whose member farmers grow mustard.
