Description
Cambogia / Malabar tamarind /kudam Puli is a popular sourcing agent used widely in Kerala cuisine. The Cambogia tree grows well in hot and wet tropical climate of Kerala. 
The fruit that is dried in the sun or smoked over wood fire is known to be an alkaline souring agent and has a distinctive taste and nutritive properties.

The Story 


Bio Basics kudampuli comes from a few homesteads of organic farmers in Thrissur District. These trees growing in their homesteads are traditionally harvested during the month of July. 
The fruit is then opened and dried, either in the sun or more popularly over a wood fire.

The second method is preferred due to a couple of reasons: July is the month of peak rains in Kerala, and the sun is barely visible. Also, the wood-smoked dried kudampuli gets a nice texture and dark, almost black colour, and has a smoky flavour.

Every 100 grams of rind approximately contains carbohydrate 17.2 gm, fat 0.5 g, proteins 2.3 gm, fiber 1.24 gm, 15.14 mg of iron, 250 mg of calcium, 10 mg of ascorbic acid, and 18.10 mg of oxalic acid.


Cooking facts 


Cambogia is an excellent souring agent and is used to make the famous Kerala fish curry, bestowing the unique smoky flavour to it.
It is also used to prepare sambar, rasam, and other curries.
