Coriander (Dhania/Kothamalli)

Coriander seeds or dhaniya or kothamalli are a flavourful spice used in Indian cuisine in almost all regions. Coriander seeds, also known as kothamalli or Malli in various languages, are used in almost all Indian regional cuisines. Coriander in the West is known as cilantro.                                                                            

Coriander seeds are grown during the Rabi season and harvested in February/March. This seed spice is grown mainly in Rajasthan, Madhya Pradesh, Gujarat, Maharashtra, and a few other states. Coriander grows well in the dry, arid soils.

Coriander leaves are grown by farmers in a kitchen garden year-round for use as a fresh herb.

Coriander seeds are again a rabi crop and are normally harvested around February to April. So the freshest coriander is available from April onwards when its flavour is strongest, and it could mildly get lower closer to the end of the season in February/March. Roasting elevates coriander seed flavour; therefore, it is roasted for many preparations and also lightly roasted for use as a powder.

Bio Basics coriander seeds are grown organically, processed, and stored naturally with no chemicals, additives, or colouring agents at any stage. It comes from two sources: a certified organic farmer producer group in Karnataka, which gets its spices from certified organic farmers from Gujarat & Rajasthan. 

The second source of coriander seeds is a PGS-certified organic farming collective based in Rajasthan. Its member farmers grow all the spices, which are then cleaned, processed, and stored for year-round use.

Nutritional Profile: Coriander is known for its digestive and anti-inflammatory properties; it is also known to help regulate blood sugar. It is also a rich source of iron, calcium, potassium, magnesium, and Vitamin C.

Flavour notes: Mild, earthy, herb-like, floral, and with mild citrus notes. It is the only spice that can counteract the flavour of other spices.

Storage: Store in a cool, dark, and dry place. Do not store for long; it could get infested. If you plan to keep it longer without using it, refrigerate it to retain its flavour and fragrance. Organically grown coriander seeds are the most prone to infestation among all seed spices, so please take extra care or powder them to prevent infestation.
