Each grain has wonderful properties. But Barley is the most under-rated!
Most of us are stuck to Rice and Wheat, and now lately, we have ventured into Millets.
But there are other grains to explore. Each with their distinctive taste, texture and dishes.
Barley, usually known for making malt for Whisky and Beer, is also a wonder food.
Its specialty is that it is low GI (Glycemic Index), high on fibre, low on calories.
So it is ideal for weight loss, because it fills you up thanks to the fibre, yet you are not consuming too many calories.
It is also great for diabetics and for lowering cholesterol. And it has low gluten compared to wheat.
In addition, it has some unique minerals in it - Magnesium, Manganese and Selenium.
Along with B-complex vitamins.
In Ayurvedic texts, it is referred to as "Yava" and is considered beneficial for the same reasons.
So it is a good idea to build Barley into our diet so we can gain from its unique properties.

How to use Barley?
Four ideas:
1. Barley Flour can be used for rotis. You can make rotis with only Barley flour or add it to your regular wheat flour.
2. Upma from Barley Rava, as usual with vegetables thrown in.
3. Porridge with Barley Dalia or even rava.
4. Khichdi, combining Barley with moong as your comfort food.
